Sea cucumbers have one of the weirdest defenses of all times. Many of them can eject their guts, leaving a nice treat for their predator, while they crawl away and regenerate their insides. Some species shoot out Cuvierian Tubules, a sticky defense that will adhere to predators and deter them from eating the sea cucumber.
